I was feeling frisky this morning, so I decided to cook breakfast. I know, I laughed too. But I’m not sure if it’s considered cooking if you use the microwave. Anyways . . .
Spray a microwave safe bowl with Pam or some other cooking spray. Add some chopped up leftover veggies. I used onions, cherry tomatoes and mushrooms. I love me some good fungi!
Next, nuke the bowl for about 1 minute and 15 seconds or until the veggies are tender.
Fill the bowl about 1/2 to 3/4 full with egg whites and add some seasoned salt or regular salt & pepper.
COVER and nuke for another 2 minutes or until egg whites are firm. The cover part is very important if you don’t want egg-whites all over the microwave.
It took me about 6 minutes to do this whole thing – including taking pictures – and it was delicious. And if you’re feeling a little naughty you can sprinkle a little feta cheese on top. I didn’t today, but I won’t judge you if you do – we all know the magical allure of cheese. The only thing that could make this omelet better is if it were smothered in Lucky Charms.
Lucky Charms? To hell with those, its gotta be topped with BACON!!! oh and cheese too, always gotta have the cheese!!
Lucky Charms are made with whole grain! That totally makes them part of a nutritious breakfast!
I’ve recently rediscovered the pleasures of the microwave too. When we remodeled our old house a few years ago, we replaced the microwave with a steam oven. Seeing the folly of our ways, my new house has a microwave. I like to eat oatmeal for breakfast, but don’t like to wash the pot afterwards. Cleaning up is what keeps me from cooking in the first place. I was lamenting this to a running cronie. Rather than laughing incredulously at my laziness, she told me how to microwave it, making it a one-dish meal that I can stick in the dishwasher.
Yummy! I never cook breakfast and your 6 minute recipe just eliminated my only excuse.

i have mushaloom issues. hate them. love cream of muchaloom soup and things with muchalooms in them, but i must be able to pick them off. too much like eating tongues.
